  • 250 g sugar Can substitute with stevia or coconut sugar.
  • 250 g butter Use unsalted butter for better control of saltiness.
  • 5 pieces eggs Consider flaxseed meal for a vegan version.
  • 1 tsp baking powder
  • 100 g cocoa powder Opt for a high-quality cocoa powder.

Filling Ingredients

  • 500 g quark Dairy-free yogurt can be used as a substitute.
  • 200 g whipped cream Use dairy-free alternative if needed.
  • 1 packet vanilla sugar
  • as needed Chocolate shavings For decoration.

Instructions
 

Preparation

  • Gather all your ingredients and pre-measure them for easy mixing.
  • Preheat your oven to 180°C (350°F).
  • In a bowl, sift together the flour, cocoa powder, and baking powder.
  • In another bowl, beat the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Slowly incorporate the dry ingredients into the wet mixture.
  • Pour the batter into a greased baking sheet and spread evenly.

Baking

  • Bake the cake for 25-30 minutes. Check doneness with a toothpick.
  • Let the cake cool completely in the pan, about an hour.

Preparation of Filling

  • Mix the quark with whipped cream and vanilla sugar until smooth.
  • Once the cake is cooled, cut it in half horizontally.
  • Spread the quark mixture on the bottom layer and place the top layer back on.

Decoration

  • Frost the top of the cake with leftover quark mixture.
  • Decorate with chocolate shavings.

Notes

Store the cake in an airtight container in the refrigerator for up to five days. Wrap securely if freezing.
