This Mississippi Mud Cake is a rich, gooey, and irresistible Southern classic. With layers of moist chocolate cake, melty marshmallows, and a fudgy chocolate topping, it’s the ultimate dessert for chocolate lovers and festive gatherings.
Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a saucepan, melt the butter over low heat. Avoid burning it.
Stir in granulated sugar, brown sugar, and cocoa powder until smooth.
Remove from heat and let cool slightly. Add eggs one at a time, mixing well after each addition.
Stir in flour, baking powder, and vanilla extract until you get a cohesive batter.
Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
Remove cake from oven and immediately top with mini marshmallows and chocolate chips.
Return cake to oven for 5 more minutes, until marshmallows are melted and slightly golden.
Cool before slicing and serving. Enjoy warm or at room temperature.
Notes
For a fun twist, swirl in peanut butter or caramel before baking. Add chopped pecans or walnuts for crunch. Serve with vanilla ice cream or whipped cream for the ultimate treat.
