Rich, fudgy brownies meet creamy mint cheesecake in these Mint Chocolate Chip Cheesecake Swirl Brownies — the perfect dessert for mint chocolate lovers. Each bite delivers a delicious balance of dense chocolate and refreshing minty cheesecake swirls.
Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
In a bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, whisking until fully combined.
Stir in cocoa powder, flour, and salt until just combined. Do not overmix. Pour most of the brownie batter into the prepared pan, reserving about ¼ cup for topping.
In a separate bowl, beat cream cheese and sugar until creamy. Add egg yolk, peppermint extract, and green food coloring; mix until smooth. Fold in mini chocolate chips.
Drop spoonfuls of the mint cheesecake mixture over the brownie batter, then dollop the reserved brownie batter on top.
Using a knife, gently swirl the mixtures together to create a marbled effect.
Bake for 30–35 minutes or until the center is set. Cool completely before cutting into squares.
Notes
For a richer flavor, chill brownies for 2 hours before serving. Store leftovers in the refrigerator for up to 5 days or freeze for up to 2 months.
