Instructions
Preparation
Start by gathering all your ingredients.
In a mixing bowl, combine the all-purpose flour, coconut oil, maple syrup, and salt. Mix until they form a crumbly texture.
Gradually add 1/4 cup of water, mixing until a dough forms. Adjust with more flour if it’s too sticky.
Lightly flour your work surface and roll out the dough to about 1/8 inch thickness.
Cut the rolled-out dough into small rectangles.
Assembly and Baking
Take half of the rectangles and place a teaspoon of strawberry jam onto the center of each.
Place the remaining rectangles on top and seal the edges with a fork.
Preheat your oven to 350°F (175°C). Place the assembled pop tarts on a baking sheet lined with parchment.
Bake for 15-20 minutes or until golden brown.
Icing
While the pop tarts cool, whisk together the powdered sugar and almond milk to create the icing.
Drizzle the icing over cooled pop tarts before serving.
Notes
Store in an airtight container for 2-3 days at room temperature or up to a week in the fridge. Can freeze for later enjoyment.
