Dough Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt
  • 1/4 cup water

Filling and Icing

  • 1/2 cup strawberry jam
  • 1/4 cup powdered sugar
  • 1 tablespoon almond milk

Preparation

  • Start by gathering all your ingredients.
  • In a mixing bowl, combine the all-purpose flour, coconut oil, maple syrup, and salt. Mix until they form a crumbly texture.
  • Gradually add 1/4 cup of water, mixing until a dough forms. Adjust with more flour if it’s too sticky.
  • Lightly flour your work surface and roll out the dough to about 1/8 inch thickness.
  • Cut the rolled-out dough into small rectangles.

Assembly and Baking

  • Take half of the rectangles and place a teaspoon of strawberry jam onto the center of each.
  • Place the remaining rectangles on top and seal the edges with a fork.
  • Preheat your oven to 350°F (175°C). Place the assembled pop tarts on a baking sheet lined with parchment.
  • Bake for 15-20 minutes or until golden brown.

Icing

  • While the pop tarts cool, whisk together the powdered sugar and almond milk to create the icing.
  • Drizzle the icing over cooled pop tarts before serving.

Notes

Store in an airtight container for 2-3 days at room temperature or up to a week in the fridge. Can freeze for later enjoyment.
