Preparation

  • Start by assembling all your ingredients at room temperature.
  • Preheat your oven to 350°F (175°C).

Making the Batter

  • Grease and flour your mini cake pans.
  • In a mixing bowl, cream the softened butter with sugar until light and fluffy.
  • Add the eggs one by one, beating well after each addition.
  • Incorporate the vanilla extract.
  • In a separate bowl, mix the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  • Gently mix until just combined.

Baking

  • Divide the batter into the prepared mini cake pans, filling them about two-thirds full.
  • Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.

Cooling and Decorating

  • Allow the cakes to cool in the pans for about 10 minutes.
  • Transfer to a wire rack and cool completely before decorating.
  • Decorate with frosting, sprinkles, or fruit as desired.

Notes

Store in an airtight container at room temperature for up to two days or in the refrigerator for longer freshness. To freeze, wrap each mini cake in plastic wrap and aluminum foil.
