Ingrédients
  

Main Ingredients

  • 1 cup cooked rice use brown or jasmine rice
  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1/4 red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olives sliced
  • 2 tbsp olive oil
  • 1 lemon juice only
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Prepare all vegetables by dicing cucumber, bell pepper, and halving cherry tomatoes. Rinse chickpeas.
  • Cook rice according to package instructions. Fluff with a fork and let cool slightly.
  • In a large mixing bowl, combine rice, chickpeas, tomatoes, cucumber, bell pepper, and red onion.
  • Whisk together olive oil and lemon juice in a small bowl. Add salt and pepper to taste.
  • Pour the dressing over the rice mixture and toss to combine.
  • Fold in crumbled feta cheese and sliced olives gently.
  • Garnish with fresh parsley and serve immediately or chill for later.

Notes

You can replace feta with vegan cheese for a dairy-free version. For a protein boost, add grilled chicken, shrimp, or tofu. Great for meal prep — store in an airtight container for up to 4 days.
