  • Begin by gathering all your ingredients. Toast the slices of bread to your liking and set them aside.
  • Prep your veggies, such as slicing cucumber and sundried tomatoes.

Cooking the Egg

  • In a small bowl, whisk the egg and plain yogurt until smooth.
  • Heat a greased pan over medium heat. Pour the egg mixture into the pan, shaping it to fit your bread size.
  • Allow it to cook until the edges begin to set.

Adding Vegetables and Cheese

  • Once the egg is partially cooked, add fresh spinach leaves on top to wilt them slightly.
  • Gently flip the egg to ensure both sides are fully cooked.
  • Sprinkle shredded mozzarella cheese and a dash of rosemary over the egg while it’s still hot.

Assembling the Sandwich

  • Mash the avocado in a small bowl with a squeeze of lemon juice, salt, and pepper.
  • Spread the avocado mixture evenly over one slice of your toasted bread.
  • Layer on sundried tomatoes and cucumber slices for added texture and flavor.
  • Crumble feta cheese over the veggies and drizzle with pesto as the finishing touch.
