  • 1/4 cup cherry tomatoes, halved

Preparation

  • Gather all your ingredients. Chop the spinach, halve the cherry tomatoes, and crumble the feta cheese.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Crack the egg into the heated skillet. Cook it sunny-side up, over-easy, or scrambled for 3 to 5 minutes.
  • Toast the whole grain bread slices until golden brown.
  • In a bowl, mix chopped spinach, crumbled feta cheese, and halved cherry tomatoes. Season with salt and pepper.

Assembly

  • Place the cooked egg on one slice of toasted bread.
  • Spoon the spinach mixture on top of the egg.
  • Top with the second slice of bread and press down gently.

Serving

  • Cut the sandwich in half and serve warm.
