  • 2 chicken breasts boneless, skinless, thinly sliced
  • salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/3 cup sun-dried tomatoes chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • 8 oz pasta penne, rigatoni, or fettuccine
  • fresh basil for garnish

Instructions
 

  • Season chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Cook chicken 4–5 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, sauté garlic for 30 seconds until fragrant.
  • Add chicken broth and sun-dried tomatoes. Simmer for 3–4 minutes.
  • Pour in heavy cream and let the sauce thicken for 3–5 minutes.
  • Stir in parmesan, Italian seasoning, and red pepper flakes. Mix until smooth.
  • Cook pasta al dente according to package directions, reserving 1/2 cup of cooking water.
  • Combine chicken, sauce, and pasta. Add a bit of reserved water to loosen if needed.
  • Garnish with fresh basil and serve warm.

Notes

Use freshly grated parmesan for a smoother sauce. For extra veggies, add spinach or mushrooms. Adjust spice level with more red pepper flakes if desired.
