Fresh Herbs

Preparation

  • Cut the cheese into bite-sized pieces and place it in a clean jar.
  • In a mixing bowl, combine olive oil and vinegar; whisk until well blended.
  • Slice garlic cloves thinly and add to the oil and vinegar mixture.
  • Chop fresh herbs and mix them into the marinade.
  • Season the marinade with salt and pepper to taste.
  • Pour the marinade over the cheese in the jar, ensuring the cheese is submerged.
  • Seal the jar and refrigerate for at least 4 hours; overnight is best.
  • When ready to serve, display the jar and accompany it with crackers or fresh bread.

Notes

Best served chilled. Store in an airtight container in the refrigerator for up to a week. Over-marinating can lead to mushy cheese, so follow timing suggestions.
