Maple Soy Salmon Strips with Fried Rice

Ingrédients
  

For the Salmon

  • 1 pound Salmon fillet, skin removed
  • 1/4 cup Maple syrup Provides sweetness
  • 1/4 cup Soy sauce For marination
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced

For the Fried Rice

  • 2 cups Cooked rice (preferably day-old)
  • 2 tablespoons Vegetable oil For frying
  • 1/2 cup Carrots, diced
  • 1/2 cup Peas (fresh or frozen)
  • 2 Eggs beaten
  • 2 tablespoons Soy sauce For seasoning fried rice
  • 1 tablespoon Sesame oil For flavor
  • Salt and pepper to taste
  • 1 tablespoon Green onions, chopped (for garnish)

Instructions
 

Preparation

  • Gather all your ingredients. Remove the skin from the salmon fillet and cut it into strips.
  • Mince the garlic and ginger, and chop the green onions and vegetables. Set aside.

Marinating the Salmon

  • In a small bowl, combine maple syrup, soy sauce, rice vinegar, sesame oil, minced garlic, and ginger.
  • Place salmon strips in a shallow dish and pour the marinade over them. Marinate for at least 15 minutes.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add diced carrots and peas to the skillet. Sauté for about 3–4 minutes.
  • Add day-old cooked rice to the skillet and stir-fry until heated throughout, about 2–3 minutes.
  • Push the rice and vegetables to one side, pour beaten eggs in the cleared space and scramble until fully cooked.
  • Mix eggs into the rice and vegetables.
  • Add soy sauce and sesame oil, stir to combine. Season with salt and pepper to taste and set aside.
  • In the same skillet, cook the marinated salmon strips for about 4–5 minutes on each side.

Serving

  • Plate the fried rice and top with cooked salmon strips.
  • Garnish with chopped green onions and serve warm.

Notes

This dish is perfect for using up day-old rice and makes for great leftovers. Customize the fried rice with your choice of vegetables.
