  • 2 pounds fresh green beans, trimmed
  • 1 can (10.5 oz) cream of mushroom soup Consider homemade or dairy-free alternatives if needed.
  • 1 cup milk Can substitute with almond, soy, or oat milk.
  • 1 teaspoon soy sauce
  • 1 cup French fried onions Use gluten-free version if necessary.
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients. Wash and trim the green beans.

Blanching the Beans

  • Bring a large pot of water to a boil and add the prepared green beans. Blanch for 5 minutes until bright green. Drain and set aside.

Making the Sauce

  • In a large bowl, mix the cream of mushroom soup, milk, soy sauce, salt, and pepper until smooth.

Combining Ingredients

  • Add the blanched green beans to the sauce mixture and toss gently to coat.
  • Fold in half of the French fried onions.

Baking the Casserole

  • Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish and top with remaining French fried onions.
  • Bake for 25-30 minutes until heated through and bubbly.

Serving

  • Allow the casserole to cool for a few minutes before serving.

Notes

For added flavor, consider sautéing garlic or onions before mixing with the green beans, or sprinkle with grated cheese during the last 5 minutes of baking. Allow to cool slightly for easier serving.
