Base Ingredients

  • 2 cups glutinous rice Can be substituted with sticky rice.
  • 1 cup mung beans Should be steamed until soft.
  • 1 cup sugar Can be replaced with honey or agave syrup.
  • 1 cup coconut milk Substitute with almond milk if unavailable.
  • 1/2 teaspoon salt
  • 1 leaf banana leaf Used for lining the steaming dish.

Instructions
 

Preparation

  • Soak the glutinous rice and mung beans overnight in water.
  • Steam the mung beans for about 20 minutes until soft and tender.

Cooking

  • In a large bowl, mix together the soaked glutinous rice, steamed mung beans, sugar, coconut milk, and salt.
  • Line a steaming dish with banana leaves.
  • Pour the rice and mung bean mixture into the prepared steaming dish.
  • Cover with additional banana leaves and steam over medium heat for 45 minutes.

Finishing

  • Check if the dish has set properly by inserting a toothpick; it should come out clean.
  • Allow the dish to cool at room temperature before slicing.
  • Carefully lift out the banana leaves and slice the dish into square or rectangle pieces.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze individually wrapped slices for longer preservation. Serve with stir-fried vegetables or a favorite protein.
