  • 1 piece Zest of 1 lemon

  • 1/2 cup powdered sugar
  • 2 tbsp lemon juice
  • 2 tbsp sparkling water

Preparation

  • Gather and measure all your ingredients. Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the softened butter and sugar. Beat until creamy and light.
  • Add eggs one at a time, mixing well after each addition. Pour in limoncello and stir until smooth.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring just until combined.
  • Fold in lemon zest to evenly distribute.
  • Grease bite-sized cake pans or muffin tins. Pour the batter into pans, filling each about two-thirds full.

Baking

  • Bake for 15-20 minutes, or until golden brown and a toothpick comes out clean.
  • Cool the cake bites in the pans for a few minutes before transferring them to a wire rack to cool completely.

Finishing Touch

  • While cooling, whisk together powdered sugar, lemon juice, and sparkling water in a small bowl.
  • Drizzle the lemon mixture over each bite before serving.
