Instructions
 

Preparation

  • Rinse the lentils thoroughly under cold water. While they’re draining, chop your onion and mince the garlic. Prepare your mixed vegetables by chopping them into bite-size pieces.

Cooking the Base

  • In a pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and minced garlic, sautéing them for about 3-4 minutes until they become soft and fragrant.

Combine Ingredients

  • Add the rinsed lentils into the pot. Stir in with the sautéed ingredients, then incorporate the vegetable broth, cumin, and turmeric, mixing well.

Bringing to a Boil

  • Increase the heat to high and bring the mixture to a boil. Take a moment to enjoy the aroma.

Simmering

  • Reduce the heat to low, cover the pot, and allow it to simmer for about 20 minutes, or until the lentils are tender.

Adding Vegetables

  • Stir in the mixed vegetables, cover, and cook for an additional 10 minutes.

  • Add salt and pepper to taste, enhancing the overall flavor.

Final Touches

  • Allow the pilaf to sit for a few minutes before serving.
