Preparation

  • Begin by rinsing your lentils under cold water to remove any residual dirt.
  • Chop the onions finely and mince the garlic cloves.
  • Slice the mushrooms and set all of your ingredients aside for easy access.

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onions and minced garlic; sauté until the onions are translucent and fragrant, about 3-5 minutes.
  • Add the sliced mushrooms and cook until browned, about 5-7 minutes.
  • Stir in the rinsed lentils, ensuring they are well coated with the mixture.
  • Pour in the vegetable broth and soy sauce, mixing thoroughly. Bring to a rolling boil.
  • Reduce the heat to low and let it simmer for about 20 minutes until the lentils are tender.
  • Stir in the coconut milk and paprika; let simmer for an additional 10 minutes until the sauce thickens.
  • Season with salt and pepper to taste.
  • Give the stroganoff a final stir before serving.

Notes

For added richness, consider incorporating fresh herbs like thyme or rosemary. Serve with crusty bread or rice.
