  • 1 whole lemon (juiced and zested)

Preparation

  • Gather and prep your ingredients by spiralizing the zucchinis and mincing the garlic.

Cooking

  • In a skillet, heat olive oil over medium heat until warm.
  • Add minced garlic to the skillet and sauté for about one minute until fragrant.
  • Introduce the spiralized zucchini noodles into the skillet and stir to coat them in the garlic and oil.
  • Cook the noodles for about 3-4 minutes, stirring occasionally until they soften slightly but remain crunchy.
  • Mix in the lemon juice and zest, stirring well to combine.
  • Season the noodles with salt and black pepper to taste.
  • Transfer the noodles to a serving plate and garnish with fresh basil leaves.

Notes

Store any leftovers in an airtight container in the refrigerator, best enjoyed within 2-3 days. To reheat, heat in a skillet over low heat.
