  • 1/4 cup fresh dill Chopped, enhances flavor
  • 1 teaspoon salt To taste
  • 1/2 teaspoon black pepper To taste

Preparation

  • Rinse the jasmine rice under cold water until the water runs clear. Set aside.

Cooking the Rice

  • In a pot, bring 4 cups of water or vegetable broth to a rolling boil.
  • Add the rinsed rice, salt, and olive oil. Stir gently and reduce heat to a simmer.
  • Cover the pot and let it simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.

Final Touches

  • Remove pot from heat and let it sit covered for 5 minutes.
  • Fluff the rice with a fork to separate grains.
  • Add lemon zest and juice, stirring well.
  • Incorporate fresh parsley and dill, mixing well.
  • Season with black pepper and oregano. Stir to combine.

Serving

  • Serve warm as a side dish or light main course.

Notes

Can substitute jasmine rice with basmati or quinoa. For a vegan version, consider mixing in chickpeas or grilled tofu. For added texture, toasted nuts can be incorporated before serving.
