Mixing the Dough

  • Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract and zest of one lemon.
  • In a separate bowl, combine the flour, baking powder, and salt. Slowly add this mixture to the wet ingredients, mixing until just combined. Avoid over mixing.
  • Gently fold in the raspberries to maintain their shape.

Baking

  • Drop spoonfuls of the batter onto ungreased cookie sheets, leaving space for spreading.
