Preparation

  • Preheat the oven to 400°F (200°C). Gather all your ingredients for easy access.
  • Rinse the chickpeas thoroughly under cold water to remove excess sodium and starch.
  • Pat the drained chickpeas dry with a kitchen towel to ensure they become crunchy.

Mixing and Baking

  • In a mixing bowl, combine chickpeas with olive oil, lemon zest, dried herbs, and salt. Toss until well coated.
  • Line a baking sheet with parchment paper. Spread the chickpeas in a single layer.
  • Bake in the preheated oven for about 25-30 minutes, stirring occasionally for even cooking.
  • Remove from oven when golden brown and crisp. Allow to cool for a few minutes before serving.
