For the soup base

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 medium lemon, juiced

Preparation

  • Clear your countertop and have a large pot ready.
  • Chop all your vegetables before turning on the stove to make the cooking process smoother.

Cooking

  • Place your large pot on the stove and heat the olive oil over medium heat.
  • Add the chopped onion, carrots, and celery, then sauté until the vegetables are soft, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Add the orzo pasta and cook according to the package instructions, usually around 8-10 minutes.
  • Once the orzo is cooked, add the shredded chicken and stir well to combine.
  • Squeeze in the lemon juice and season generously with salt and pepper to taste.
  • Ladle the hot soup into bowls and garnish with fresh parsley.

Notes

This soup is versatile and can be customized with additional greens or spices. Freezing may change the texture of orzo, so consider freezing broth and orzo separately.
