Preparation

  • Start by gathering all your ingredients. Chop the tomatoes, cucumber, and red onion. Shred the chicken if not done.

Cooking

  • Heat the olive oil in a pan over medium heat.
  • Season your shredded chicken with salt and pepper, then add to the hot oil.
  • Allow the chicken to warm for about 5 minutes, stirring occasionally until slightly crispy on the edges.

Assembly

  • Layer the bottom of a serving bowl with the cooked rice.
  • Add the warmed chicken on top of the rice.
  • Top with diced tomatoes and cucumber.
  • Sprinkle sliced red onions over the top.
  • Drizzle tzatziki sauce generously over the assembled ingredients.
  • Finish by sprinkling crumbled feta cheese on top.
  • Serve immediately for the freshest experience.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Separate tzatziki for best freshness. Can be frozen before adding vegetables.
