  • 1 lb ground beef You can replace with ground turkey or chicken if preferred.
  • 1 cup sliced bell peppers
  • 1 cup sliced onion
  • 2 cups shredded cheese (provolone or cheddar recommended) Can substitute with Gouda or Monterey Jack.
  • 1 package low-carb wraps or dough Gluten-free alternative available.
  • 2 tablespoons olive oil
  • Salt and pepper To taste

Instructions
 

Preparation

  • Gather all ingredients. Slice the bell peppers and onion thinly.
  • Measure out the ground beef and cheese.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers. Cook for 5-7 minutes until softened.
  • Add ground beef and season with salt and pepper. Cook for 7-10 minutes until fully browned.

Assembly

  • Lay out the low-carb wraps. Keep them warm for easier rolling.
  • Place a portion of the beef mixture on one side of each wrap and top with shredded cheese.
  • Roll the wraps tightly, tucking in sides to prevent spillage.

Baking

  • Place the rolls seam side down on a baking sheet lined with parchment paper.
  • Preheat the oven to 375°F (190°C) and bake the rolls for 15-20 minutes until cheese is bubbling and wraps are golden brown.

Serving

  • Let the rolls cool for a minute, slice in half, and serve warm.

Notes

Store leftovers in an airtight container for up to 3-4 days. For freezing, wrap each roll tightly in plastic wrap and place in a freezer bag.
