  • 2 tablespoons mayonnaise Can substitute with Greek yogurt.
  • 1 teaspoon lime juice Can substitute with lemon juice.

  • 1 tablespoon chopped cilantro For garnish.

Preparation

  • Gather all your ingredients to streamline the cooking process.
  • Place six eggs in a pot and cover them with cold water. Bring to a boil over medium heat.
  • Once boiling, cover the pot and turn off the heat. Let the eggs sit for 10 minutes.
  • Transfer the eggs to an ice bath for 5-10 minutes to cool them rapidly.
  • Gently tap each egg on a hard surface to crack, then peel under running water.
  • Slice each egg in half lengthwise and remove the yolks into a mixing bowl.

Filling

  • Add the ripe avocado, mayonnaise, lime juice, salt, and pepper to the yolks. Blend until smooth.
  • Use a spoon or piping bag to fill the egg white halves with the avocado-yolk mixture.
  • Garnish with fresh chopped cilantro before serving.

Notes

These eggs are best served fresh but can be stored in an airtight container for up to three days. For best texture, fill the egg whites just before serving.
