  • 1 lb chicken breast cut into cubes
  • 1/2 cup teriyaki sauce
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • salt and pepper to taste
  • wooden or metal skewers

Instructions
 

  • Cut the chicken into bite-sized cubes. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  • In a large mixing bowl, whisk together teriyaki sauce, olive oil, honey, garlic powder, ginger powder, salt, and pepper until smooth.
  • Add chicken cubes to the bowl and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to overnight) to marinate.
  • Preheat grill to medium-high heat. Thread marinated chicken cubes onto skewers, leaving a little space between pieces for even cooking.
  • Grill the skewers for 5–7 minutes per side, brushing occasionally with leftover marinade, until the chicken is cooked through and slightly caramelized.
  • Check that the internal temperature of the chicken reaches 165°F (74°C). Remove from grill and let rest for 2 minutes.
  • Garnish with sesame seeds or chopped green onions if desired, and serve hot with rice or grilled vegetables.

Notes

For a tropical twist, alternate chicken with pineapple chunks on the skewers. You can bake these in the oven at 400°F (200°C) for 15–20 minutes if grilling isn’t an option. Use gluten-free teriyaki sauce or tamari for a gluten-free version.
