  • 2 pieces chicken breasts Skinless and boneless
  • 2 medium zucchinis Sliced into rounds
  • 2 tablespoons olive oil Divided for chicken and zucchini
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste
  • Fresh herbs Optional, for garnish

Preparation

  • Gather all your ingredients. Wash the zucchini thoroughly and slice them into rounds.

Cooking the Chicken

  • Preheat your skillet over medium heat. Pat the chicken breasts dry with paper towels.
  • Drizzle both sides of the chicken breasts with olive oil and season with garlic powder, onion powder, salt, and pepper.
  • Place the seasoned chicken in the hot skillet and cook undisturbed for about 6-7 minutes until golden-brown.
  • Flip the chicken breasts and cook for another 6-7 minutes until the internal temperature reaches 165°F (75°C).

Sautéing the Zucchini

  • In another pan, heat a tablespoon of olive oil and add the sliced zucchini. Sauté for about 5 minutes until tender but still crunchy.

Serving

  • Remove the chicken from the skillet and let it rest for a couple of minutes before slicing.
  • Plate the sliced chicken alongside the sautéed zucchini and garnish with fresh herbs if desired.

Notes

To store, cool leftovers completely and transfer to an airtight container. Store in the fridge for up to 3-4 days. For freezing, portion into individual containers.
