Pudding Base

  • 4 lemons zested and juiced
  • 150 g caster sugar
  • 100 g self-raising flour
  • 1/2 tsp baking powder
  • 2 large eggs
  • 250 ml milk
  • 50 g unsalted butter melted

Sauce Layer

  • 300 ml boiling water poured over the batter before baking

Instructions
 

  • Preheat oven to 350°F (180°C) and grease a medium-sized baking dish.
  • In a bowl, combine lemon zest, lemon juice, caster sugar, self-raising flour, and baking powder.
  • Add eggs and whisk until smooth and creamy.
  • Stir in the milk gradually, followed by the melted butter, mixing until the batter is smooth.
  • Pour the batter into the prepared baking dish.
  • Carefully pour the boiling water over the batter — do not stir. This will form the sauce as it bakes.
  • Bake for 30–35 minutes until the top is golden and the pudding is set.
  • Let cool slightly before serving to allow the sauce to thicken.
  • Serve warm with whipped cream, vanilla ice cream, or fresh berries.

Notes

This dessert creates its own sauce during baking — a true crowd-pleaser! For variation, try adding orange zest, shredded coconut, or a handful of raspberries to the batter. It can be served warm or cold and stored for up to 3 days in the refrigerator.
