Dough Ingredients

  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup cold butter, diced Can substitute with coconut oil or dairy-free alternative.
  • 1/4 cup cold water Adjust as necessary to form dough.
  • 1 teaspoon salt

Filling Ingredients

  • 1 cup mixed vegetables (carrots, peas, corn) Fresh or frozen.
  • 1/2 cup onion, finely chopped Use sweet onion for milder flavor.
  • 1 clove garlic, minced Adjust to taste.
  • 1 teaspoon thyme Fresh or dried.
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper

Preparation

  • Gather all ingredients and chop mixed vegetables into small, bite-sized pieces. Finely mince the garlic and onion.

Cooking the Filling

  • In a pan over medium heat, sauté onion and garlic until soft and fragrant, about 2-3 minutes.
  • Add mixed vegetables, thyme, paprika, and black pepper. Cook for another 5 minutes until vegetables are tender. Remove from heat and let cool.

Dough Preparation

  • In a large bowl, combine flour and salt. Add diced butter and mix until resembling coarse crumbs.
  • Gradually add cold water until the dough comes together into a soft, pliable ball.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Assembling the Patties

  • After chilling, roll out the dough to 1/8 inch thickness on a floured surface.
  • Cut out circles of dough about 4-5 inches in diameter.
  • Place about a tablespoon of cooled vegetable filling on one half of each circle.
  • Fold the dough over the filling and use a fork to crimp the edges securely.

Baking

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Arrange the patties on the sheet and bake for about 25 minutes until golden brown.

Notes

These patties can be made ahead, frozen, and baked from frozen when needed. They are great served with dipping sauces like mango chutney or zesty yogurt sauce.
