Tortillas and Sauce

  • 8 pieces flour tortillas Warm them for easier rolling.
  • 1 cup enchilada sauce Store-bought or homemade.

Spices

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt Adjust to taste.
  • 1/4 teaspoon pepper Adjust to taste.

Instructions
 

Preparation

  • Gather all your ingredients and shred the cooked chicken if not already done.
  • Soften the cream cheese at room temperature or use the microwave briefly.

Mix the Filling

  • In a large bowl, combine chicken, cream cheese, cheddar cheese, jalapeños, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.

Prepare the Tortillas

  • Heat flour tortillas on a skillet for about 30 seconds on each side until warm and pliable.

Fill the Tortillas

  • Spoon about 1/3 cup of the chicken mixture into each tortilla and roll them tightly.

Arrange in Baking Dish

  • Spread a small amount of enchilada sauce at the bottom of a greased baking dish and place rolled tortillas seam-side down.

Add Enchilada Sauce and Cheese

  • Pour remaining enchilada sauce over tortillas ensuring even coverage, and sprinkle any remaining cheese on top. Add bacon if using.

Bake the Enchiladas

  • Preheat oven to 350°F (175°C) and bake for 25-30 minutes until bubbly and golden.
