Preparation

  • Preheat your oven to 350°F (175°C).
  • Gather all your ingredients.

Mixing

  • In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Add the egg and mix thoroughly until fully incorporated.

Forming the Meatloaf

  • Grease a loaf pan with cooking spray or olive oil.
  • Mold half of the chicken mixture into the base of the pan.
  • Place the cubed mozzarella cheese in the center of the mixture.
  • Cover the cheese with the remaining chicken mixture, pressing down gently.

Baking

  • Pour the marinara sauce evenly on top.
  • Bake in the oven for 45-50 minutes, checking that the internal temperature reaches 165°F (75°C).

Serving

  • Let the meatloaf rest for a few minutes before slicing.
  • Slice and serve warm.

Notes

For gluten-free, use gluten-free breadcrumbs. For dairy-free, substitute with dairy-free cheese alternatives. Storing best in airtight containers in the refrigerator for 3-4 days.
