Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  • Measure all ingredients to streamline the cooking process.

Mix Topping

  • In a medium mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, and a pinch of salt and pepper. Stir until blended.

Prepare Sauce

  • In a small bowl, whisk together the olive oil and Dijon mustard until smooth.

Assemble Salmon

  • Place the salmon fillets on the prepared baking sheet, skin-side down.
  • Generously brush the olive oil and mustard mixture over each salmon fillet.
  • Evenly press the Parmesan-breadcrumb mixture onto the top of each fillet.

Bake and Broil

  • Bake in the preheated oven for about 12 to 15 minutes, until cooked through and topping is golden brown.
  • For an extra crispy crust, switch to broil for the last 1-2 minutes. Avoid burning by watching closely.

Serve

  • Allow salmon to rest for a couple of minutes before serving.
  • Garnish with chopped parsley and serve with lemon wedges.
