  • 4 cups watermelon, seedless and cubed
  • 1 cup whipped cream
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 piece pre-made pie crust (graham cracker or traditional)

Optional Garnish

  • to taste mint leaves for garnish

Instructions
 

Preparation

  • Wash the watermelon thoroughly and remove any seeds before cubing it into small pieces.
  • Using a blender, puree the cubed watermelon until smooth. For a thicker consistency, strain the puree to remove excess water.
  • In a large mixing bowl, beat the softened cream cheese until it’s completely smooth.

Mixing

  • Add the whipped cream, powdered sugar, and vanilla extract to the beaten cream cheese and mix until combined.
  • Gently fold the watermelon puree into the cream mixture using a spatula.

Assembly

  • Place the pre-made pie crust on a serving dish.
  • Pour the watermelon mixture into the pie crust, spreading it evenly.

Chilling

  • Cover the pie and refrigerate for 2-3 hours until set.
  • Optionally garnish with fresh mint leaves before serving.

Serving

  • Slice the pie and serve chilled.

Notes

To keep the pie fresh, store it in the refrigerator for up to 3-4 days. You can also freeze the pie but be aware that the texture may change upon thawing.
