  • 1 large egg For vegan, use a flax egg.
  • 2 tablespoons melted butter Ensure it's cooled slightly before mixing.
  • 1 teaspoon vanilla extract

Preparation

  • Gather all your ingredients on a clean countertop or table.
  • Measure out the flour, sugar, baking powder, baking soda, salt, and ground cinnamon in one bowl.
  • In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract.

Cooking

  • Whisk together the dry ingredients until well combined.
  • In the bowl with the wet ingredients, whisk thoroughly, ensuring melted butter isn’t too hot.
  • Create a well in the center of the dry mixture and pour the wet blend into it.
  • Gently stir until just combined; it's okay for the batter to have some lumps.
  • Preheat a skillet over medium heat and lightly coat with butter or oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancakes carefully and cook for an additional 1-2 minutes until golden brown.
  • Remove from skillet and serve warm with toppings of your choice.

Notes

For best results, serve pancakes immediately after cooking. You can customize them with chocolate chips, nuts, or fresh fruits.
