Irresistible Valentine’s Day Snack Mix

- 4 cups Rice Chex or similar rice cereal Use gluten-free if needed.
- 3 cups mini pretzels (heart-shaped if available)
- 2 cups unflavored popcorn
Sweet Add-Ins
- 1.5 cups M&Ms in red, pink, and white Valentine’s colors Substitute with other candies if preferred.
- 1 cup white chocolate chips for melting Use dairy-free if needed.
- 0.5 cups red and pink candy melts
- 0.67 cups dried cranberries
- 0.5 cups conversation heart candies
- 3 tablespoons Valentine’s themed sprinkles
Coating Ingredients
- 2 teaspoons coconut oil, divided
Instructions
Preparation
- Gather all the ingredients listed.
- Ensure your workspace is clean and organized.
- Measure out your rice cereal, pretzels, popcorn, and other goodies.
Cooking
- In a large mixing bowl, combine the Rice Chex, mini pretzels, and unflavored popcorn.
- Gently mix these dry ingredients until well-distributed.
- In a microwave-safe bowl, combine the white chocolate chips with 1 teaspoon of coconut oil.
- Heat in intervals of 20 seconds, stirring in between, until smooth.
- Pour two-thirds of the melted white chocolate over the cereal mixture and fold gently.
- Transfer the mixture to a prepared baking sheet lined with parchment paper.
- Spread the mixture out evenly.
- While still warm, sprinkle M&Ms, dried cranberries, and conversation heart candies on top.
- In a separate bowl, melt the red and pink candy melts with the remaining coconut oil.
- Drizzle the melted candy melts over the snack mix and add sprinkles before it cools.
- Allow the mix to set at room temperature or refrigerate until hardened.
Serving
- Break the snack mix into clusters and serve in a festive bowl or bag.

Store in an airtight container at room temperature for 1-2 weeks. You can also freeze portions for longer storage.
