Instructions
 

Preparation

  • Gather all your ingredients ahead of time. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.

Mixing

  • Cream the softened butter and sugar together in a large mixing bowl until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with milk. Start and end with the dry ingredients. Mix until just combined.

Baking

  • Pour the prepared batter evenly into the greased cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.

Assembling and Decorating

  • Level the tops of the cooled cakes if necessary. Place one layer on a serving platter and spread frosting evenly across the top, then add the second layer.
  • Cover the assembled cake with fondant and decorate creatively with any additional decorations you desire.

Notes

Store the cake in an airtight container. It lasts for up to 2 days at room temperature or a week in the refrigerator. If frozen, it can last 2-3 months.
