Preparation

  • Start by washing and peeling the carrots thoroughly. Cut them into uniform chunks.

Cooking the Carrots

  • Bring a pot of salted water to a boil. Add your carrot chunks and cook until tender, about 10-15 minutes.
  • Drain the carrots and let them cool slightly. Smash each carrot piece with a fork or potato masher, creating thick, smashed pieces.

Preparing the Glaze

  • In a mixing bowl, combine the olive oil, honey or maple syrup, soy sauce, minced garlic, and season with salt and pepper. Whisk until smooth.

Coating and Roasting

  • Toss the smashed carrots in the glaze until well coated. Line a baking sheet with parchment paper and spread the carrots evenly.
  • Preheat your oven to 425°F (220°C) and roast the carrots for 20-25 minutes until golden and crispy.

Serving

  • Remove the roasted carrots from the oven, garnish with fresh herbs, and serve warm.

Notes

Avoid overcrowding the baking sheet to ensure even roasting. Adjust seasoning in the glaze to taste before coating the carrots.
