Preparation

  • Gather all your ingredients. Wash, peel, and slice the peaches into wedges, removing the pit.
  • In a separate bowl, combine the sliced peaches with sugar, flour, lemon juice, and a pinch of salt. Toss gently to coat the peaches.
  • If using homemade dough, roll it out on a floured surface to about 1/8-inch thick. For pre-made crust, unroll it onto a baking sheet lined with parchment paper.

Assembly

  • Spoon the peach mixture into the center of the crust, creating a mound, leaving a 2-inch border around the edge.
  • Fold the edges of the crust over the peach filling, making pleats as you go to create a rustic look.
  • In a small bowl, beat the egg and brush the mixture over the exposed crust.

Baking

  • Preheat your oven to 400°F (200°C). Bake the galette for 25-30 minutes until the crust is golden and peaches are bubbly.
  • Allow the galette to cool slightly on a wire rack before serving.
