  • 1 lb sausage breakfast or spicy sausage
  • 1 can (10 oz) Rotel tomatoes drained
  • 8 oz cream cheese softened
  • 2 cups shredded cheddar cheese
  • 1 cup almond flour or regular flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine sausage, drained Rotel tomatoes, softened cream cheese, shredded cheddar cheese, almond flour, garlic powder, onion powder, salt, and pepper. Mix thoroughly until evenly combined.
  • Form mixture into small 1-inch balls and place them on the prepared baking sheet, leaving space between each ball.
  • Bake for 20–25 minutes or until golden brown and cooked through. The exterior should be crisp, and the inside soft and creamy.
  • Allow to cool for 5 minutes before serving. Serve warm with your favorite dipping sauces such as ranch or salsa.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage.

Notes

Drain the Rotel tomatoes well to avoid a soggy mixture. Mix until just combined to keep the sausage balls tender. You can substitute pork sausage with turkey or plant-based sausage for dietary variations. For a spicy version, add diced jalapeños or cayenne pepper.
