Preparation

  • Preheat your oven to 400°F (200°C).
  • Halve the ripe tomatoes, chop the onion, and mince the garlic.

Roasting Tomatoes

  • Place the halved tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 25-30 minutes until soft and caramelized.

Cooking Vegetables

  • In a large pot, heat some olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add minced garlic and sauté for about a minute until fragrant, avoiding browning.

Combining Ingredients

  • Transfer the roasted tomatoes and their juices into the pot with the sautéed vegetables.
  • Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for about 10 minutes.
  • Add fresh basil leaves and stir.

Blending and Serving

  • Blend the soup until smooth using an immersion blender or in batches in a regular blender.
  • Adjust seasoning with salt and pepper before serving.
  • Serve warm in bowls, garnished with additional basil leaves or a drizzle of olive oil if desired.
