  • 2 pieces burrito-sized tortillas
  • 1/4 cup barbecue sauce Use your favorite brand or homemade
  • 4 ounces plain pulled pork, cooked and shredded
  • 1/2 cup cooked macaroni and cheese Pre-made or homemade
  • 1/4 cup shredded triple cheddar cheese Can substitute with other cheese types

Preparation

  • Gather all your ingredients.
  • Ensure the pulled pork is cooked and shredded into bite-sized pieces.
  • Prepare your macaroni and cheese if not already made.

Cooking

  • Heat a skillet over medium heat.
  • Cut a small slit in each tortilla, about 2-3 inches long.
  • Spread barbecue sauce evenly into one corner of the tortilla.
  • Layer torn pulled pork over the barbecue sauce and drizzle more barbecue sauce over the pork.
  • Spoon cooked macaroni and cheese on top of the pulled pork.
  • Sprinkle shredded triple cheddar cheese on top.
  • Fold the tortilla over the filling, tucking in the sides and rolling tightly.
  • Place the wrapped tortilla seam-side down in the hot skillet.
  • Cook for 3-4 minutes until golden brown, then flip to brown the other side.
  • Remove from the skillet and serve warm with extra barbecue sauce on the side.

Notes

For gluten-free options, use corn or gluten-free tortillas. For vegetarian, substitute pulled pork with jackfruit or a meat alternative.
