  • 2 pounds ripe pears, peeled, cored, and chopped into small pieces Choose sweet and ripe varieties for the best flavor.
  • 4 cups granulated sugar Can substitute with honey or agave nectar.
  • 1/4 cup lemon juice (freshly squeezed is best) Provides a zesty kick.
  • 1 package (1.75 oz) fruit pectin (pectin for making jam) Can use low-sugar or no-sugar varieties if desired.
  • 1 cup water

Preparation

  • Sterilize jars and lids in boiling water for 10 minutes.
  • Peel, core, and chop the pears into small, even pieces.

Cooking

  • In a large pot, combine chopped pears, sugar, lemon juice, and water.
  • Heat over medium until the mixture begins to simmer (10-15 minutes).
  • Increase heat to medium-high and bring to a rolling boil while stirring continuously.
  • Sprinkle in the fruit pectin while stirring constantly.
  • Continue boiling for about 10 minutes while stirring frequently.
  • To determine if the jam is ready, place a spoonful on a cold plate; if it holds its shape, it’s done.
  • Ladle the hot mixture into sterilized jars, leaving about 1/4-inch headspace.
  • Process the jars in a boiling water bath for 5-10 minutes.
  • Cool the jars on a towel or cooling rack and check that the lids have sealed properly.

Enjoying

  • Spread the jam on toast, use it on yogurt, or incorporate it into pastries.

Notes

Store sealed jars in a cool, dark place. Once opened, refrigerate and consume within three weeks. Can freeze if necessary.
