Instructions
 

Preparation

  • Gather all your ingredients, ensuring your pears are ripe for optimal sweetness.
  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a small bowl, gently toss the thinly sliced pears with 1 tablespoon of brown sugar.

Mixing

  • In a larger mixing bowl, cream the softened butter and remaining brown sugar for about 2-3 minutes until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, almond flour, baking powder, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix gently until just combined.
  • Fold half of the sliced pears into the batter.

Baking

  • Pour the batter into the prepared cake pan, smoothing out the top.
  • Arrange the remaining pear slices over the top and sprinkle with sliced almonds if desired.
  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow it to cool slightly before serving.

Notes

To enhance flavor, add a splash of almond extract or topping with powdered sugar for presentation. Store in an airtight container at room temperature for up to 3 days.
