  • 4-5 ripe passion fruits
  • 1/2 cup granulated sugar Can substitute with coconut sugar or honey
  • 3 large eggs Can substitute with silken tofu for a vegan option
  • 1/4 cup unsalted butter Can substitute with coconut oil or vegan butter
  • 1 tablespoon lemon juice Can adjust or substitute with lime or orange juice
  • 1 pinch salt

Preparation

  • Begin by gathering all your ingredients. Cut the passion fruits in half, scoop out the pulp, and separate the seeds from the pulp.

Cooking

  • In a medium saucepan, whisk together the passion fruit pulp, sugar, eggs, unsalted butter, lemon juice, and a pinch of salt.
  • Place the saucepan over medium heat and cook, stirring constantly to ensure everything mixes evenly.
  • Continue to cook the mixture for about 10-15 minutes until it thickens enough to coat the back of a spoon.
  • Once thickened, remove it from the heat and strain it through a fine mesh sieve into a clean bowl.
  • Allow the strained curd to cool to room temperature.

Finishing

  • Transfer the cooled curd into a clean glass jar, seal it tightly, and refrigerate for at least a couple of hours to thicken further.
  • Enjoy it spread on toast, as a filling for cakes, or by the spoonful.

Notes

Store in an airtight container in the refrigerator for up to two weeks. For longer preservation, freeze in a freezer-safe container.
