Dry Ingredients

  • 1 teaspoon baking soda Leavening agent.
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt Balances the flavors.
  • 1 teaspoon ground cinnamon Adds warmth and flavor.
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger Adds spiciness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Grate your zucchini and set it aside.

Mix Wet Ingredients

  • In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until creamy.

Mix Dry Ingredients

  • In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

Combine Mixtures

  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.

Bake

  • Pour the batter into the loaf pan and bake for 60 to 70 minutes, or until a toothpick comes out clean.
