  • 1 cup long-grain rice Preferably long-grain
  • 1 can black beans, drained and rinsed
  • 1 cup vegetable broth or water Use low-sodium if preferred
  • 1 piece bell pepper, diced Can use red, yellow, or green
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • to taste salt and pepper Adjust according to preference

Preparation

  • Gather and prep all your ingredients. Rinse black beans under cold water and chop onion and bell pepper into bite-sized pieces. Mince the garlic.

Cooking

  • In a large pan, heat olive oil over medium heat. Add diced onion and bell pepper; sauté for about 5-7 minutes until tender.
  • Once soft, stir in minced garlic and cumin; cook for another minute until fragrant.
  • Add uncooked rice to the pan and stir well to coat grains with oil and vegetables.
  • Pour in vegetable broth or water and gently stir in drained black beans. Ensure all rice grains are submerged in liquid. Bring to a boil.
  • Once boiling, reduce heat to low, cover, and let it simmer for about 20 minutes.
  • After 20 minutes, check rice for doneness. Remove lid and fluff rice gently with a fork. Season with salt and pepper.

Serving

  • Transfer to a serving dish and garnish with fresh parsley.

Notes

To enhance flavor, add lemon juice before serving. Ideas for variations include adding diced cucumbers, olives, or jalapeños.
