  • 2 pieces chicken breasts
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup olives, sliced (black or green) Optional
  • 2 tablespoons olive oil
  • 1 teaspoon Mediterranean spices (such as oregano, basil, and thyme)
  • to taste Salt and pepper

Preparation

  • Wash the cherry tomatoes and halve them carefully. Slice the olives and set them aside. Season the chicken breasts with salt, pepper, and Mediterranean spices.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and sear them for 5-7 minutes on each side until golden brown. Remove the chicken and let it rest.
  • In the same skillet, add orzo and sauté for 1-2 minutes until fragrant.
  • Add halved cherry tomatoes and sliced olives to the orzo and sauté for another couple of minutes.
  • Pour in 2 cups of water or chicken broth, bring to a boil, then reduce heat to simmer. Cook orzo for about 10 minutes, stirring occasionally, until tender.
  • While orzo is cooking, slice rested chicken breasts into strips.
  • Once orzo is done, mix in sliced chicken and let it warm for a minute.

Serving

  • Garnish with fresh parsley before serving.

Notes

To store leftovers, cool completely before transferring to an airtight container. Refrigerate for up to 3 days or freeze for longer storage.
