Delight in these tropical Mango Crumb Bars — a perfect blend of buttery oat crumble and sweet, tangy mango filling. Ideal for summer desserts, parties, or a quick sweet treat anytime!
Preheat oven to 350°F (175°C) and grease a 9x9 inch baking pan.
In a mixing bowl, combine flour, softened butter, granulated sugar, brown sugar, salt, and baking powder. Mix until crumbly.
Press half of the crumb mixture into the prepared pan to form the crust.
In another bowl, combine mango puree, lemon juice, and vanilla extract. Stir gently until well mixed.
Pour the mango mixture over the crust and spread evenly.
Sprinkle the remaining crumb mixture on top of the filling.
Bake for 30–35 minutes until the top is golden brown.
Cool completely before cutting into squares.
