Main Ingredients

  • 2 cups cooked lobster meat, chopped
  • 1 cup shredded cheese (such as Monterey Jack or Cheddar)
  • 4 large tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tablespoon lime juice
  • to taste Salt and pepper

Preparation

  • Gather all ingredients and prepare them: chop the cooked lobster meat, shred your choice of cheese, and slice the green onions.

Mixing the Filling

  • In a large bowl, combine lobster, shredded cheese, green onions, lime juice, salt, and pepper. Mix well.

Cooking

  • Heat a skillet over medium heat. Add a tablespoon of butter or oil.
  • Place one tortilla in the skillet and add a generous amount of the lobster filling on one side. Fold the tortilla over.
  • Cook for 3-4 minutes until golden brown. Flip and cook the other side for another 3-4 minutes.
  • Repeat with remaining tortillas and filling.
  • Slice into wedges and serve with sour cream.
  • Garnish with extra chopped green onions or a sprinkle of lime juice if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For best reheat results, use a skillet over medium heat.
