Ingrédients

  • 2 cups cooked chicken shredded
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 4 large flour tortillas
  • 1/4 cup hot honey
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • salt to taste

Instructions
 

  • Heat a skillet over medium heat and add olive oil. Toss in the shredded chicken, season with chili powder, garlic powder, and salt. Cook for 5–7 minutes until heated through and fragrant.
  • Place one tortilla in the skillet. Sprinkle half of the cheese over one side to form a base.
  • Add a layer of the seasoned chicken on top of the cheese, then drizzle with hot honey for a sweet-spicy kick.
  • Top with the remaining cheese, fold the tortilla in half, and press lightly.
  • Cook the quesadilla for 3–4 minutes per side or until golden brown and crispy. Repeat with remaining tortillas.
  • Slice into wedges and serve warm with extra hot honey, salsa, or guacamole.

Notes

For extra crunch, add diced bell peppers or onions to the chicken mixture. Adjust the level of heat by using more or less hot honey. To make it vegetarian, substitute chicken with black beans or sautéed mushrooms and use vegan cheese.
