  • 1 lb shrimp, peeled and deveined
  • ¼ cup honey
  • 4 cloves garlic, minced
  • ¼ cup soy sauce or tamari for gluten-free
  • 2 tbsp lime juice

For Serving

  • 2 cups cooked rice white, brown, or your choice
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots) fresh or frozen
  • 1 tbsp sesame seeds for garnish
  • 2 green onions chopped for garnish

Instructions
 

Preparation

  • Gather all your ingredients, including peeling and deveining the shrimp if not already done. Chop your vegetables.
  • In a mixing bowl, combine the honey, minced garlic, soy sauce, and lime juice. Stir well to blend.
  • Add the shrimp to the marinade, ensuring they are fully coated. Cover and let sit for about 15 minutes.

Cooking

  • While the shrimp is marinating, heat a skillet over medium heat.
  • Once hot, add the marinated shrimp and sauté for approximately 3 to 4 minutes until they turn pink and opaque.
  • In the same skillet, add your mixed vegetables. Cook for about 3 to 5 minutes until tender yet still crisp.

Serving

  • Create a bed of cooked rice on each plate. Top with the cooked shrimp and sautéed vegetables.
  • Garnish with sesame seeds and chopped green onions before serving.

Notes

For a spicy kick, add red pepper flakes to the shrimp while cooking. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
